Traditional South East Asian flat bread which is shallow fried and goes great with both vegetarian and meat dishes.

Ingredients:

4 cups Wholemeal flour
1 teaspoon Salt
Some Melted butter or ghee
1 1/4 cups Water
A little Oil for coating the parathas
A little flour for rolling



Directions:


Put wholemeal flour, salt and 3 tablespoons of the melted butter in a bowl. Make a well in the center and add the water. Knead well for about 6 minutes to make a soft dough. Leave to one side for 15 minutes.

Divide into four equal balls and roll out each to about 5 inches in diameter. Smear lightly with oil using a brush and fold into a half circle. Brush with oil again and sprinkle with a little flour. Fold into a triangle. Flatten the triangle a little with the roller.

Heat a large pan on medium heat and add some melted butter ghee. Put the parathas into the pan and fry, flip until both sides are light, golden brown and crisp adding a little melted butter ghee as needed. Serve hot.

Repeat as necessary until the 4 parathas are cooked.
