A delicious and mouthwatering dip of shrimp and cottage cheese for the diet conscious.
Ingredients:
2 cups low-fat (1% fat) cottage cheese
2 tablespoons low-fat (1% fat) milk
1/4 small yellow onion
4 springs parsley
1 teaspoon dried dill weed
1 clove garlic,halved
1/4 teaspoon black pepper
6 ounces cooked peeled shrimp, finely chopped
If short on time, substitute with 1 can of canned shrimp for the fresh.
Directions:
In a food processor or blender, blend the cottage cheese, milk, onion, parsley, dill weed, garlic, and pepper until smooth. Stir in the shrimps. Cover and refrigerate for at least one hour (good for 2 days). Serve with an assortment of fresh veggies and low fat/baked chips. Makes about 2 cups.
